Shuji Hiyakawa

A protégé of Iron Chef Masaharu Morimoto, Shuji Hiyakawa presides over Dashi, a progressive Japanese restaurant located at River Yacht Club. He was first exposed to a career in the gastronomy as a young child in his father’s noodle shop in Fukuoka, Japan. Hiyakawa first drew accolades for his work as Executive Sushi Chef at Morimoto in Philadelphia. His work with the Iron Chef and, later, his groundbreaking cuisine at OJR restaurant group was awarded the best sushi in Philadelphia in 2010. This recognition led to an invitation to cook at the James Beard House. Hiyakawa relocated to the South Florida area as the opening Executive Sushi Chef and menu creator for Kuro in the Hard Rock Hotel and Casino. At Dashi Hiyakawa will continue to purse culinary excellence by his commitment to pristine selections of the highest quality fish and compelling textures and flavors while maintaining the essential qualities of the featured ingredients.
